Thecnn Story About Baby Caylee

little dictionary: errors, fashion, legends, whims and advertising

head of cabbage in a vegetarian it is fine, because it is a good food, but it is good that the vegetarian is a head of cabbage. (Drawing by N. Valerio).
.
The most endangered animal species at the table? The beef, you say. And in second place? The chicken. Here, in fact, we're talking man. Okay I like to provoke, but I wonder that many individuals of the species Homo sapiens , ssp. vegetarianus so sensitive to the life of animals, not pose health problems, and thus eventually become victims of their own same table. If all the drink. Never as the "carnivores", of course, usually not only not pose health problems, but not ethical, ecological, economic. And much less, of course, the individuals of the species Bos taurus , poor things, facts on the table sliced \u200b\u200bmeat eaters.
Fortunately, things are a bit 'better, thanks to scientific information now available to all (ah, if people knew how to distinguish between sources on the Internet series and sources of propaganda, instead of judging according to ... graphics and photos!). Today, in terms of nutritional science and biochemistry of foods you know the three times when I published the supplement "Health" Republic a guide in the form ABC, which caused a sensation and gave me many letters and phone calls of consent. The quick guide below to propose again, updated and completely rebuilt.
The scientists acknowledge that we vegetarians are statistically "best" and "more aware" of omnivorous consumers of food. Indeed, when one of their study can not, or can not explain why vegetarians have less risk of disease, some scholars attribute this to their greater attention to food and the "lifestyle" the superiority of our diet, rather than the vegetarian itself. But vegetarians recruited for the experiments are generally provided by specialized club, and more aware and educated than average. That result would give the same experiments, if there were some girls I know call me, and they are really representative dell'ineducazione food and nutrition environment prevailing in many vegetarian? The average vegetarian
still makes too many mistakes, and uninformed. Of course, does not live in crass ignorance of the common man "carnivore", reads a lot and in fact often goes on the Internet. However, tends to read and see only what reassures him, that confirmed his ideas. The average vegetarian, so most of the "carnivore" is a victim of excess non-controlled chaotic argument, pseudo-scientific myths, badly translated or censored texts, ideologies, diets weird, personal methods of "healing" and especially the manufacturers of surreptitious advertising.
Naturists not, is in their blood anticonsumismo and critical. But vegetarians, in general, are more consumerist of "carnivores." Able to find "just one brand, because of publicity, even if less than one unknown. And cram any product, maybe technology, artificial, unnecessary and even harmful, just because its advertising him as "ideal for vegetarians." Up to make even a symbol of identity. In short, the worst of the bad-information.
Why? Why continue to believe, like 10 or 30 years ago, as if there was now a scientific literature detailed, that once removed the meat almost everything is resolved. His entire polemic puts it in speaking evil of the flesh. Then, critically exhausted, the vegetarian does not seem to have more energy to analyze severe plant foods.
But, no, must get in your head then the problems begin, that has to change and enlarge the whole diet, and above all become "expert", a nutritionist at himself.
Nutritionists academics are convinced that for us masochists heirs of Pythagoras, philosopher, lover of the shadows of the afterlife, it's normal to hurt ourselves. But it is not.
Certainly, after the various "emergencies flesh" (from "mad cow" disease in fish mercury), thousands of new vegetarians or near-vegetarians who are beginning to replace meat with fish, in fact future vegetarians (vegetarians fish-they are called, without irony, and unfortunately, the United States) do not know how to get on.
Yet the sacred fire there. "It will be a flash in the pan?", He asked the doctor Giuseppe Farinelli Institute of tumors, then president of vegetarians.
writer ingurgitò sausage last in 1970, with a little peace of mind 'in an ironic Socrates drinking the hemlock. Well, after many years believes that the lack of one million vegetarians in Italy (and to be optimistic that another "10 million" shot for commercial reasons from public opinion surveys commissioned by the producers of gourmet veg-business ...), gaps can come without the "multiplication table", true, no numbers, because the old vegetarian, who codified the first of the English Revolution vegetarianism and veganism, was called "Pythagorean diet". But please, do not "give the numbers"! We are willing to cancel
legends and ideas from Eastern philosophy overheard by hippies 70s, and to follow the hated science in this country of housewives, lawyers, teachers and employees? Only in this way, the flat green is equal in nutrition and prevention than in the conventional diet, with lots of food in a more ("Biodiversity" in the pot), more varied menu (less toxic), the richest portions (effectiveness). What want?
short, "flat green" many mistakes!
Let's look, therefore, mistakes, excesses, obsessions, bad cliches, false ideas and pseudo-science by advertising, which typically characterize the common thinking of vegetarians:
.
Alfalfa or alfalfa (Medicago sativa ). The buds contain the 1, 5 percent of canavanine, a mutagen and carcinogen, and in subjects at risk of being prepared can trigger a severe syndrome immune-like lupus erythematosus (B. Ames; MRMalinow). Yet in the shops continue to expose for sale the seeds of alfalfa. Fortunately, very few buy them, but ...
.
Algae. Nori, wakame, hiziki, dulse, etc. are sold at a price deceiving consumers with their minerals (iodine is really only interesting for vegetarians, who do not eat fish) and with the hope of vit.B12. There are both, but iodine varies from game to game, and often has evaporated in the sun when the algae were dried, the vitamin is cyanocobalamin, the only comparable Man, so it is useless as they warned the associations themselves vegetarian.
.
Amaranth. Small sow corn used as in the past in Central America, is reputed to be rich in lysine (970 mg per 100g), but it is difficult to bake and cook so presentable and tasty (as colloidal masses). It is also expensive. So it is used in small quantities. Instead, any legume - cheap, tasty and eaten in large quantities - has more lysine amaranth, as well as wheat germ and cheese. Lentils, mung and cowpea have even doubled.
.
Anemia . Suffer "carnivores" and vegetarian. And they do not because of the vegetarian diet, if that does not give practical rationality anemia, indeed. Rather, for sloppiness, anorexia latent misunderstandings or restrictions. See B12 and Iron.
.
B12 (vitamin). E 'produced only by bacteria, so it is where there are dirt and fermentation. We produce too? Sure. But damn, the man makes the "mistake" too low. Our droppings are rich in B12 it unusable. Perhaps this is why chimps and infants, scandalizing zoology and baby sitters sometimes taste your poo? A table is present only in animal foods (eggs, milk and dairy products), and traces of "on" raw vegetables (vegetables, sprouts) handled by dirty hands or with traces of humus, and not well washed. The risk-benefit for the most vulnerable children, in these cases (see Asia, Africa and South America), it is natural to integrate with B12 for life. Short-lived, however, due to intestinal infections (typhoid, salmonella, etc.). Vitamin B12 is not in legumes, tofu, seitan in, in shoots in wheat germ, algae and tempeh. Lacto-ovo-vegetarians live well with the B12 of eggs, cheese and milk consumed regularly. But for the vegan (only plant foods) B12 hoarded in the liver when they were not vegan lasts at most a few months or years (V. Herbert). In cases of anemia have to go to dairy products and eggs. See an original table of B12 for vegetarians. .
.
Organic (food). Everyone is looking for organic fruits and salads. But the bio is useful, ironically, more for food animals, such as eggs and cheese (which require a few) and for the plants. Dairy products and eggs, such as meat, contain, in fact, high traces of drugs, hormones and antibiotics given to animals in factory farms. With the risk to consumers also hormonal and antibiotic resistance in infections. In truth traces of antibiotics and drugs are also found in animal products bio. "Even living in the stables - are justified farmers - there's always some sick cow." And in plants? Yet today there are now few or no chemical differences between plant and non-bio-bio. How is it possible? Agriculture mass, the one that sells to big supermarkets, use more and more biological control (predators of pest insects) and fewer pesticides (expensive) than those used by the ignorant peasant once, and even today. And chemists have invented some pesticides degrade "on time", so largely absent when we put the food on the table. The proof is that the ISS is a few residues in common foods of the supermarkets, on average 70-90% of the samples is "organic" without declaring it. Beware, however, your vegetables or fruits like those of a time "produced by the farmer. There are technical or elderly farmers spraying onto the whole bottle, even worse if out of time, against the rules of the leaflet, because "it's a bit better 'more: the evil does." Also in plants there is a well-known biological reaction of netting, which shocked the general public every time I remember it: the plant untreated secretes more man's own natural pesticides. For the most protective (polyphenols, etc.), but few of these also increase the cancer. The first still prevail. The differences between organic and non-bio, well, now they are really minimal.
k
Football . It is lacking only the vegetarian sloppy, they eat poorly or who have anorexic tendencies. It does not help the campaigns of many anti-milk fanatics on the internet. The two or at most three daily servings of dairy products (eg a glass of milk, 1 cup of yogurt and / or 100g or 50g soft curd cheese) are not poisonous as it says the urban legend spread by the lobby macrobiotics: milk and yoghurt for most of the water. Watch out, rather, not to overdo it with cheese (see the neophyte cheese ). Fortunately, it was discovered that is very similar also calcium mineral water (discard the ubiquitous and super-publicized mineral) and aqueducts. But the plants also give good football, as in an original table .
.
"Meat" soy . Defatted soy protein taken from the solvent oil and "woven" in the form of animal muscle fibers. Most of the artificial and dell'innaturale.
Conosco vegetariani che non hanno mai letto un libro serio sul vegetarismo, but trust blindly leaflets (these, yes, you should call them "Bugiardini") left by the representatives of companies on the shelves of organic food stores and herbalists.
.
Sweets . "Greedy as a vegetarian." There are those who live for ice cream, cakes, sweets, chocolate and sweets ("vegetarian pudding"). But so goes hungry and do not take protein, fiber, polyphenols, vitamins, calcium, iron and precious.
.
Exoticism . That would be the "trendy western vegetarian" without the famous exotic foods that are "trendy" and cost a fortune of the head, almost all artificial and manipulated by industry? Tofu (tofu and ice), milk or soy yogurt, seitan, miso, soy sauce, tempeh, natto, umeboshi, soba, gomasio, tahini, amaranth, quinoa, seaweed, etc., are all products imported from the Far East or South America. Instead, the power would naturally simple foods, natural, locally sourced. They know the fine girls veg, lentils the vulgar, to cite one example, are far superior to a plate of tasteless tofu to plate ", where even cooking and seasoning are wrong, as evidenced by the brown strips of burnt and soy sauce, both carcinogenic risk, even theoretical?
.
Iron . Legumes (lentils, chickpeas, peas, beans, broad beans, grass peas, mung, adzuki, soy) is more iron (5-8 mg per 100 g) than in beef (2.3 mg) or horse (3, 2). But it is less similar (3-5 per cent, compared with 16-20). The same for oil seeds (sesame, sunflower, almonds, etc...) The iron in eggs (2.5) is equated to 5 percent, spinach (2.9) is available (26 percent, D. Zhang), but in other vegetables (parsley, watercress, dandelion, turnip etc.). al'1 only-2 per cent. On the other hand, the drugs are useless or harmful (risk ipersideremia). What to do? Just take each day a number of natural sources of iron: legumes, oilseeds and various raw and cooked vegetables. From time to time, molasses, yeast, mint, nettle crush, manna, dried tomatoes, sprouts greek hay. A secret: use a lot of lemon juice and eat 1-2 citrus dessert: citric acid and vit.C also increase by 100 per cent iron uptake of plants (DPDerman) and neutralize the anti-iron fibers (JLKelsay). In practice, made it out, thanks to the large number of plant sources, a vegetarian has more iron rational "heme-comparable", that is comparable, on a "carnivore". So much so that we can recommend the "carnivores" anemic to become vegetarian. With these rules, though. Two original tables iron (and folate, which is essential against anemia, see also B12) have been designed especially for vegetarians.
.
Fish-vegetarian . Omnivores that have eliminated the ground beef and other meat, and consume fish and shellfish.
.
Cheese neophyte . At first many neo-vegetarians simply replace meat with dairy products (vegetarian with cheese). Proteins great, but more calories: 20-40 against 3-6 percent fat, 400 on average against 113-204 Kcal. Excess saturated fat in the long term risks of obesity, heart disease and cancer. Focusing instead on the egg, because cholesterol is a risk - for an egg a day - is inconsistent (Roberts and Connors), about half portions of ricotta cheese and less fat, legumes and jump on the diet (see below). Hostility towards certain dairy products, see Milk .
.
soy cheese. See Tofu.
h.
soy ice cream. See Soymilk and Tofu . .
.
Wheat germ . Few vegetarians use it. Cool, you have plenty of vitamin without grease with oil seeds, and it provides valuable and abundant B vitamins, in addition to large amounts of zinc, iron, magnesium, and essential fatty acids. The wheat germ oil, however, is not recommended because it degrades rapidly in dark bottles and not out of the fridge, causing free radicals in the body of those who would destroy. Yet it is sold at room temperature. It is also easily advanced with other cheaper oils.
.
shoots. Smaller ones or soft (mung, wheat, lentils, azuki beans) are eaten raw in salads, while avoiding the hassle of cooking. Enzyme activity reduces phytates and other anti-nutrient that although anti-cancer, anti-diabetes and anti-cholesterol may reduce the absorption of minerals too, already critical in some vegetarians (and JKCavan SSKadam). The small so-called "bean sprouts" to eat raw are actually mung. The long shoots of soybean true, the yellow one, found only in the East or in the Chinese communities, and must be cooked.
.
Pollution . 1. The indifferent : everything is polluted, no is contaminated. The catchphrase of pollution is used as an excuse to sit on their bad habits. "Now the board is full of poisons. So we might as well continue to eat like we used to. The best white bread, but full, and the apple for" prudence "is best peeled. Grave error. 2. Pseudo and scientific . Many vegetarians believe that the skins of fruits and outside of cereal grains, legumes and seeds, being in direct contact with the air "are more polluted," and should be eliminated (the fruit should be peeled, rice is better than refined white flour, bread and pasta better than white or in full). In short, for their pollution would be a kind of powder that falls from the sky, dirty plants to the surface. Wrong: it is the typical folktale. If so, simply rinse the vegetables. Instead, the serious pollution is systemic, that involves the entire plant and it will come in depth, whether it is from the soil through the roots, whether it comes from the atmosphere.
It 's true that pollution is general, but your skin and outer covering of the grain, rich in powerful antioxidants, anti-nutritional substances and fibers, are the best defense against pollution damage (usually cancer). And, as repeated oncologists and epidemiologists, the risk of spreading disease to the absence of antioxidants (Ie, coating) is much higher than that of plants complete (with all its antioxidants).
And it is foolish to do without salad, fruit and vegetables at home if we do not have anything "organic" because the scientific differences are minimal, given the degradation "on time" of the few man-made pesticide residues. The oncologist Della Porta: "As the plants can be contaminated in any case, eating the plants is far more protective against cancer than eating, or eat too little."
.
Supplements . Minerals, vitamins, amino acids isolated, extracts, active ingredients etc.. All in a nutshell. The "diet drug." In practice, the hundreds or thousands of natural chemicals present in any food, it extracts and uses only one. Then it should not be complex "synergy" with other substances, which turned out to be the real cause of preventive and curative properties of plants. Instead, the integrator block (or a few substances isolated) is almost always either ineffective or not effective or harmful. Two examples of them all, beta-carotene and vitamin C (most popular), that studies have even shown to be carcinogenic or mutagenic (for all: Inran). While if taken as food are powerful anti-cancer. But supplements are also a convenient support, refugium peccatorum di ideologi e cultori di sette.
.
almond milk. Tasty and healthy drink, but can not substitute milk for the presence of potent anti-thyroid substances. In infants has caused severe damage: anemia, goiter, brittle bones (osteopenia and osteomalacia), less development, muscular hypotonia, cardiomyopathy (C. Kanaka). See Soymilk .
.
rice milk. It can not replace milk. See Soymilk.
.
Soymilk . No substitute for milk, also for the presence of potent anti-thyroid substances. It has no amino acids, salts, vitamins and flavor of milk. The protein deficient in lysine, are absorbed only 60 per cent. Rich in anti-enzyme and anti-nutrient. He did not vit.D antirachitic, B12, iodine, calcium assimilated (the relationship with the phosphorus is 1:1), or immune factors. Given to infants without supplements and medical supervision, can cause deficiencies, malnutrition, goiter, arrested development, and infections (IELiener, JMConcon, M. Novak, European Journal of Pediatrics 1992).
.
Legumes .
.
Yeast. powder or tablets, the yeast devitalized its leavening power is an excellent natural supplement the entire B complex vitamins (thiamin from the B1 or later). Vegetarians do well to eat, but in reality many are under the illusion that also contains vitamin B12. Not so.
.
Lysine . Cereals are deficient in this amino acid, which limits the uptake of their proteins. But isolated (as a supplement) is highly recommended. What to do? You can persistence - as would the advertising - To look for exotic grains that are more talented (and for many Europeans the mucilaginous "inedible" qu inoa and amaranth), but it is better to resort to any legume, which is very rich and tasty European-or oat , which is suitable for immediate consumption flakes, abundant and versatile. For vegan, including the regular use of whole grains (whole wheat flour, wheat, barley, buckwheat) brings a lot of lysine, and are much more tasty and versatile in the kitchen and acceptable. The economic and delicious food-grains mixed vegetables complement each other amino acids, eliminating the problem at fonte.
For a more detailed the pros and cons, and updating of Kushi M., see the ' full article dedicated to macrobiotic according to scientific studies on Natural Power.
.
Miso. semi-solid paste obtained by fermentation of soybeans. It is used as the stock cube. See soy sauces and Macrobiotic .
.
Shopping . Despite overall, the clerks are not experts to turn to for advice. They sell everything, even artificial foods, processed, unnecessary and expensive (eg rice "blown"), impractical and colloidal (quinoa and amaranth "lysine-rich", but it is better our oats), inadvisable (flour and white pulp) or hazardous (alfalfa seeds). The vegetarian has to learn before entering the store.
.
Protein . Many vegetarians believe that vegetable proteins are like those animals. But for the American Dietetic Association green diet is "healthy and balanced" only if done correctly and with proteins of high biological value, which is similar. What do you mean? Should be as close as possible to the values \u200b\u200bof amino acids of the egg (index 100). Then there are the dairy products (80). Even medium-sized proteins of legumes (60), combined with the poor cereal in a single course or at the same meal (2 / 3 and 1 / 3 raw weight), give an overall protein quality comparable to medium-high meat (FAO, Inran).
.
Advertising (see also Leaflet ). It is not the truth.
.
Quinoa.
Pane, riso e pasta bianchi, farina 0 oppure 00, frutta e ortaggi sbucciati, legumi passati, dovrebbero essere vietati per i vegetariani, perché fanno perdere fibre, active, germ, vitamins and minerals (eg copper and folic acid, anti-anemic carriers) and increasing shortages. Almost all active food (anti-diabetes, anti-cholesterol, anti-obesity, anti-constipation, anti-inflammation, anti-cancer, etc.), are in fact on the outside, seeds and grains because they are substances of protection from direct sunlight and vermin.
.
Puffed rice . Biscuits high technology used by secretaries and artificial to fool the palate with snacks in the office. Damage fewer calories than regular rice, too full, just because technology makes them full of air, and then very slight. Expensive, if you are assessed by weight and no flavor. Both are now out in trade ... the chocolate biscuits absurd, denying the reasons for which they were invented. Would be enough to eat smaller portions, cereals true, well cooked and well seasoned. Yes, but in the office? Or the lunchbox (schiscetta "in Milan), or carrots, fruit and / or real bread!
.
Soy sauce (tamari, shoyu). Obtained by fermentation in salt water and seed solia and cereals, sauces are salty (about 18 per cent of salt) flavored "gravy." There are different types and qualities. They are all at risk condiments for the presence of amines biogenic (tyramine) that are combined with nitrates (reduced to nitrite by bacteria in the stomach) to form carcinogenic nitrosamines that cause stomach cancer - Japan, Korea and China, in fact, are in first place in the world - and the liver, as well as other Mutagen. Therefore be used in drips and seldom, or rather eliminated. See Macrobiotic .
.
Seit an . Meat substitute the vague taste of "chicken." In reality it is wheat gluten, a protein of very low quality, that is a little similar, such as bread or pasta. It 'totally useless for what it costs. Unless the non-seitan it is consumed just like pasta or bread slices and serve with vegetables, eggs or dairy products ("complementary" and "extra" protein). Vit.B12 did not, being a vegetable.
.
snobbery. There is no use denying it, and in some cases without limits. We know that it is different from the mass, are the few (elite), and only for this fine. Better then strange names and distant horizons: he had never encountered the door (see Exoticism).
.
Soybean (Glycine max ). More spoken and eaten. Soybeans are pulses with a long and problematic area. In practice, not natural to eat anyone, not even in the East, where it is used to shoot us, fermented sauces, spaghetti, fake-milk, curd, etc.. In desperation has given the false label of "green soybeans" for mung and "soy red" to azuki (there is also a "black soybean), all very good and tender vegetables that have nothing to do with soybeans, and they are finally mangiabili.Yogurt soy. See Soymilk .
.
Tempeh . Fermented soybeans and colonized by the fungus Rhizopus oligosporus , long believed to have vit.B12 and advertised as such. But traces of the vitamin were due to contamination of the laboratories East. Manufactured in the West following the rules of hygiene, did not reveal B12 (BLSpecker; M. Bricklin and H. Rodale).
.
Stubbornness. Virtue, shall we say, typical of all minorities who suffered discrimination and thus have hardened in the resistance. On the average vegetarian is useless to present a scientific study that refutes his mania. Answer that science is polluted by industry. Biting into a biscuit of puffed rice, and with 3 or 4 supplements in my purse ...
.
Tofu . It 's the so-called "bean curd" obtained from the protein of soy bean curd, and biological value protein medium (chemical index of about 60), equal to that of the seed and yellow similar to that of any other legume (lentils, chickpeas, peas, etc.). Eat cheap, greasy and tasteless tofu, therefore, is to consume a large plate of delicious lentils. It has no vitamin B12 as real cheese. In terms of quality (ie real assimilation) of proteins, including tofu, like all legumes, can not substitute eggs, cheese, fish and meat, unless accompanied in the same meal from a generous portion cereal (protein complementation) such as pasta, pizza, bread, rice, barley, bulgur, etc.. But then, price, convenience and taste above all, it should be a normal plate of pasta and chickpeas, and rice and peas. See also Soymilk .
.
Vegan . Vegetarian fundamentalists who refuse even milk, dairy products and eggs, sure to be saved - or so they believe - from pills supplements from the pharmacy.
.
Vegetarian jet-set . Actresses, dancers, footballers, athletes, entertainers, rock singers and other show business personalities to fashion themselves as "vegetarian" to appear socially and environmentally sound, and maybe have more commercial success among the young animals. Almost always eat chicken and fish.
.
Vegetarian virtual . Omnivore from sensitive and politically correct thinking to imagine that like a vegetarian, and who decides to become when they are interviewed by interviewers of opinion polling organizations. After a few weeks will return to the diet of all time. But in the meantime it appears that in Italy about 60 million inhabitants over 10 million would be "vegetarian". In fact, vegetarians in everyday life are so rare that a reasonable estimate of inductive and does not go beyond 1 million or 1 million and a half.
.
Zuzzurellone . The fool of the village so we were all at least once, to listen to advertising, brochures pseudo-scientific, to cook macrobiotic, the propaganda of the Internet site, the book publisher unknown, an alternative to the magazine, the order of that was the first organic shop hairdresser. Then there are those that are desired if: they believe that it is not an animal to defend. "I do not care selfishly my health, but ethics," he said a girl, only vegan da qualche settimana. .

The vegetarian food acts as anti-cancer. In five ways

Vedremo.
Mie amate crocette I hope with the next one to show Fotina
